
Ingredients: (4 servings)
1 lb ground turkey
1/2 yellow onion, chopped
4 cloves garlic, minced
1 lb. rigatoni
1 1/2 cups chicken broth
1/2 cup half & half
1 14 oz can San Marzano tomatoes, pureed
1 cup spinach, roughly chopped
1 tsp Italian seasoning
1 tsp red pepper flakes
2 tsp salt
1 tsp pepper
Blend the San Marzano tomatoes, or your favorite prejarred tomato sauce.
Over medium heat drizzle oil in a deep skillet or dutch oven. Add onion & garlic, saute for 3-5 minutes.
Add in ground turkey & mash with a wooden spoon. Add the Italian seasoning, red pepper, salt & pepper. Stir occasionally until meat is browned.
Add the pasta, broth, half & half, & tomato sauce. Stir to combine & raise heat to medium high until boiling.
Cover, reduce heat to low & cook for 13 minutes, stirring every 3 minutes.
Once pasta is tender & you're left with a creamy sauce turn off the heat & stir in the chopped spinach.
Top with your favorite parmesan or pecorino romano & enjoy!
