Creamy Vegan Linguine


1 package cherry tomatoes

2 garlic cloves

1 shallot, diced

1 lb linguine

1 cup cashews

olive oil


~Start roasting cherry tomatoes in 350 degree oven for 30 min along with chopped shallots & garlic cloves. Drizzle with olive oil.

~In a food processor add 1 cup of cashews, roasted cherry tomatoes, shallots & garlic cloves, & 1 cup of your boiling pasta water.

~Blend until desired consistency.

~Mix sauce with pasta & pasta water. Enjoy!
