Mozzarella Stuffed Meatballs

Ingredients
1 lb ground beef
3 cloves garlic, chopped
Handful fresh parsley, chopped
2 eggs
½ cup breadcrumbs
½ cup grated parmesan
diced fresh mozzarella
16 oz canned chopped tomatoes
Tomato purée
Handful of basil
Parmesan rind
Preparation
Over medium-low heat place chopped tomatoes, tomato puree, basil & Parmesan rind in a pot. Cook for around 35 minutes.
In a bowl combine ground beef, bread crumbs, parsley, basil, oregano, egg and Parmesan cheese. Shape into golf sized shaped balls.
Place in the center of each meatball a piece of fresh mozzarella. Seal the meatball so when cooking the cheese doesn’t melt through.
Drizzle enough olive oil in skillet over medium heat, where meatballs are a 1/4 submerged. Brown meatballs & finish cooking in sauce. (Before placing meatballs in sauce remove basil & rind and discard)
