Mozzarella Stuffed Meatballs



Ingredients

  • 1 lb ground beef

  • 3 cloves garlic, chopped

  • Handful fresh parsley, chopped

  • 2 eggs

  • ½ cup breadcrumbs

  • ½ cup grated parmesan

  • diced fresh mozzarella

  • 16 oz canned chopped tomatoes

  • Tomato purée

  • Handful of basil

  • Parmesan rind

Preparation

  1. Over medium-low heat place chopped tomatoes, tomato puree, basil & Parmesan rind in a pot. Cook for around 35 minutes.

  2. In a bowl combine ground beef, bread crumbs, parsley, basil, oregano, egg and Parmesan cheese. Shape into golf sized shaped balls.

  3. Place in the center of each meatball a piece of fresh mozzarella. Seal the meatball so when cooking the cheese doesn’t melt through.

  4. Drizzle enough olive oil in skillet over medium heat, where meatballs are a 1/4 submerged. Brown meatballs & finish cooking in sauce. (Before placing meatballs in sauce remove basil & rind and discard)
