Lemon Gruyère Pasta

Ingredients
1 shallot, diced
1-2 cloves garlic, minced
olive oil
juice of 1 lemon
1/4 cup pasta water
1/4 cup or more of gruyere cheese, melted
1-2 Tbsp of butter
lemon zest for garnish
1 lb pasta
Directions
Saute garlic in olive oil for 1-2 minutes over medium low heat. Cook pasta accordingly.
Add shallots and sauté for 2 minutes.
Add in lemon juice & cooked pasta with shredded cheese.
Add in pasta water & butter, and toss.
Top with lemon zest & additional cheese. Enjoy!
