Thank you Butcher Box for partnering with me with this recipe. Ingredients
1 lb. Butcher Box 100% grass fed ground beef
4 cups baby spinach
2 tsp fresh basil, chopped
2 whole carrots, chopped
2 stalks celery, chopped
1 Tbsp. minced garlic
2 Tbsp. fresh parsley, chopped
1 medium sweet onion, diced
1 egg
8 cups chicken broth
1 cup acini di pepe
½ cup breadcrumbs
½ cup grated parmesan
In a bowl combine ground beef, bread crumbs, parsley, basil, oregano, egg and Parmesan cheese. Shape into golf sized shaped balls. Brown in pot over medium heat. Remove from skillet and plate.
In same pot over medium heat add onion, carrots and celery. Cook until the vegetables are slightly softened, about 5 minutes. Add garlic, parsley, basil and oregano and cook for 1 minute. Add cooked vegetables to heavy stockpot or Dutch oven. Add chicken broth and bring to low boil.
Add acini di pepe and cooked meatballs. Cook for 15 minutes or until pasta is tender. Add spinach last minute of cooking.
