Homemade Italian Pasta

Ingredients
1 ½ cups flour
½ cup semolina flour
2 whole eggs
3 egg yolks
Preparation
Mix the flour & semolina together. Create a well.
In the well add the eggs & mix just the eggs with a fork. Once mixed, start incorporating the flour.
When the dough mixture is too tough to mix with the fork switch to your hands. Continue to work until the dough does not stick to your fingers.
Knead dough for 8-10 minutes on a floured surface.
Cover the dough ball in plastic wrap for 30 minutes.
Cut dough into 4 equal pieces. Roll out each piece with a rolling pin.
Starting with the pasta roller pass the dough through the rollers to desired thickness.
Cut to desired pasta shape.
Cook in salted boiling for 2 minutes.
Place the cooked pasta in a serving bowl & make it snow with some parmesan cheese! Top with your favorite Italian Sauce.!
