Ingredients
~4 sweet potatoes, cubed
~butternut squash, cubed
~bunch of kale
~can of white beans
~4 whole carrots, chopped
~4 celery stalks, chopped
~1/2 onion, chopped
~3 cloves garlic, minced
~16 oz fire roasted tomatoes
~8 cups chicken broth, low sodium
~2 tbsp. Oregano
In your instapot drizzle olive oil & set to sauté mode. Once hot sauté garlic for 1-2 minutes. Add onions, carrots, & celery & sauté for 5-7 minutes. Add rest of ingredients & set to soup mode for 20 minutes. Serve & enjoy!
