Christmas Short Rib Pasta

Ingredients
1-2 lbs short ribs (boneless)
3 slices prosciutto
1 cup dry red wine
½ cup beef broth
2 28oz cans crushed tomatoes
6oz tomato paste
1 onion, chopped
6 gloves garlic, chopped
3 ribs celery, chopped
1 carrot, chopped
2 sprigs fresh thyme
1 Tbsp. fresh sage, chopped
1 tsp. Red pepper flakes
½ stick butter
½ cup fresh parmesan & rind
1 lb of your fav pasta (I recommend rigatoni or tagliatelle)
Preparation
Season short ribs with salt & pepper. In insta pot on saute mode (or skillet) cook prosciutto until crisp for about 5 minutes. Remove.
Sear short ribs on both sides around 5-7 minutes.
Once seared, turn off saute mode. Add prosciutto, parm rind, wine, broth, tomatoes, tomato paste, onion, garlic, celery, carrot, thyme, sage, red pepper, and butter.
Cover and cook on pressure cooker mode for 30 minutes (or crock pot for 4-6 hours)
Once done remove short ribs, rind, & thyme. Cool slightly & shred meat. Discard thyme & rind.
Cook pasta in boiling water according to directions. Toss pasta with parm cheese, sauce, & short ribs.
Tips: Serve ½-1 lb per person. This recipe makes extra sauce for the rest of your week! Use with any pasta dish for a quick easy meal!
