Christmas Cacciatore


MamaToni’s Christmas Eve Cacciatore

Ingredients

  • 1 lb. boneless chicken thighs

  • 1 jar marinara

  • 2-3 red peppers, sliced

  • Handful of fresh parsley & basil, chopped

  • dried oregano

  • Garlic salt & pepper

  • Olive Oil

Preparation

  1. Season chicken with garlic salt & pepper.

  2. In a skillet coated in olive over medium heat add chicken. Saute for 2-3 minutes just until cooked browned. Do not throughly cook, we will finish cooking the chicken in the crockpot.

  3. Remove chicken and plate. Sauté peppers for 5-10 minutes. All in all ingredients to pot along with all the other ingredients.

  4. Stir and cook on medium low heat for 35 minutes.

  5. Plate on top of your favorite pasta and garnish with additional fresh parsley & pecorino romano. Mangia!
