Chicken & Broccoli Rabe Pasta

INGREDIENTS:
1 pound fusilli pasta
1 bunch broccoli rabe
3 tablespoons olive oil
2 cloves garlic, chopped
1 shallot, chopped
1/2 teaspoon red pepper flakes
1/2-1lb chicken, cubed
1 cup freshly grated Pecorino Ramono cheese
1 lemon
INSTRUCTIONS:
Heat a large skillet over medium-high heat. Drizzle olive oil, season chicken with salt & pepper. Heat in skillet until cooke thoroughly. Once cooked remove from skillet.
Bring a large pot of water to a boil over high heat. Cook the pasta for 2 minutes less than the package directions indicate. Add the broccoli rabe to the water with the pasta and cook for an additional minute.
Heat a large skillet over medium-high heat. Add the oil, garlic, shallot, 1/2 teaspoon salt and red pepper flakes, if using. Cook for 2 minutes or until soft and fragrant.
Add the chicken and toss well to coat in all the flavors. Add the pasta to the pan along with the Parmigiano-Reggiano. Toss well to combine adding the pasta water, top with lemon juice & enjoy!
