Chicken & Broccoli Rabe Pasta


INGREDIENTS:

  • 1 pound fusilli pasta

  • 1 bunch broccoli rabe

  • 3 tablespoons olive oil

  • 2 cloves garlic, chopped

  • 1 shallot, chopped

  • 1/2 teaspoon red pepper flakes

  • 1/2-1lb chicken, cubed

  • 1 cup freshly grated Pecorino Ramono cheese

  • 1 lemon


INSTRUCTIONS:

  • Heat a large skillet over medium-high heat. Drizzle olive oil, season chicken with salt & pepper. Heat in skillet until cooke thoroughly. Once cooked remove from skillet.

  • Bring a large pot of water to a boil over high heat. Cook the pasta for 2 minutes less than the package directions indicate. Add the broccoli rabe to the water with the pasta and cook for an additional minute.

  • Heat a large skillet over medium-high heat. Add the oil, garlic, shallot, 1/2 teaspoon salt and red pepper flakes, if using. Cook for 2 minutes or until soft and fragrant.

  • Add the chicken and toss well to coat in all the flavors. Add the pasta to the pan along with the Parmigiano-Reggiano. Toss well to combine adding the pasta water, top with lemon juice & enjoy!
